Mustard roast potatoes, beans and nibbles
Emily: “Inspired by your blog, I have sent a new lunch today. Not convinced it will all get eaten but worth a try. They were already asking for their peanut butter sandwiches as they saw me making this. It contains mustard roast potatoes (the best roast potatoes ever) raw green beans, yogurt, nuts, raisins, dried unsalted chickpeas, apple and plum.”

Emily’s children tend to have nut butter sandwiches as that’s what they like. Some schools won’t let children take nuts to school, but luckily hers does. For a change, Meridian nut butters (particularly the cashew) are amazing and come highly recommended. I have them with my porridge of a cold morning.

Sourdough ham rolls and home made banana chips
Some days, only a ham roll will do, although I like to elevate it with a sourdough roll. How to make your own banana chips here. For an extra layer of smugness: home grown raspberries picked this morning.
Sausage, quinoa and Camargue red rice salad
The quinoa salad is a left over from the weekend. It’s packed full of lovely things like pistachio nuts and apricots . The recipe is here. Veggies could easily substitute something else for the sausage.
